Peanut Brittle Day is held annually on January 26. I am not sure who made this holiday or when it first started.

I enjoy me some good peanut brittle! Don’t you?

Peanut Brittle Recipe

Peanut Brittle Day

Ingredients

  1. 1 Cup Peanuts
  2. 1 tsp Baking Soda
  3. 2 Tbsp Butter
  4. 1 Cup Sugar
  5. 1/4 Cup Corn Syrup
  6. 1/4 tsp Salt
  7. 1/4 Cup water
  8. 1 tsp Vanilla extract

Directions

  1. Grease large cookie sheet
  2. Use a 2 quart saucepan, medium heat, bring to a boil sugar, corn syrup, salt, vanilla extract and water.
  3. Stir until sugar is dissolved.
  4. Stir in peanuts.
  5. Use thermometer and continue cooking and stirring frequently until temperature reaches 300 degrees F (150 degrees C).
  6. Remove from heat.
  7. Immediately stir in butter and baking soda.
  8. Pour at once onto cookie sheet. With a couple of forks, lift and pull peanut mixture onto cookie Sheet.
  9. Allow to cool.
  10. Snap candy into pieces.
  11. Place in storage containers.
  12. Enjoy! Share!

You can use aluminum foil and/or parchment paper for easier clean up.
